Abstract:

Maltose-neopentyl glycol-3 (MNG-3) was synthesized as a detergent to extract integral membrane proteins (IMPs) from the cell; MNG-3 has flexibility originating from its carbon center and its arms comprising alkyl chains and maltose groups. Herein we demonstrate the reverse-scissoring behavior of MNG-3 through the use of different subphase conditions at the air/water interface. This result illustrates that hydrophilic maltose part of MNG-3 is flexible and rotatable to coordinate with hydrophilic or ionic species for stabilization.
